Minestrone Soup

I want to share with you my favourite homemade soup recipe. Its hearty, and SO healthy for you. This recipe tastes absolutely delicious.. I can even get the whole family to eat it 🙂 This recipe is full of fresh vegetables, and is so satisfying, it is sure to hit the spot on chilly day. 

Ingredients 

  • 3 tablespoons olive oil ( I like to use the president choice Roasted Garlic)
  • 1 cup white onion
  • 2 zuchinis 
  • 1/2 cup green beans
  • 4 celery sticks
  • 1 can red kidney beans
  • 1 can white kidney beans
  • 2-3 cloves fresh garlic, depending how much you like
  • 5-7cups vegetable broth
  • 1 can diced tomatoes 
  • 2 tbs fresh parsley
  • 2 tbs dried oregeno
  • salt to taste
  • pepper to taste
  • 1 tsp dried basil
  • 1 tsp dried thyme 
  • OPTIONAL: 1/2 shell pasta
  • I use 1 cup frozen kale instead
  • parmesan cheese to garnish your bowl

Directions 

  • add olive oil to your pot (I use a Le Crueset/Dutch oven) 
  • add onions, zucchini and celery
  • sauce with the garlic and spices
  • add canned tomatoes (including juice), and beans (drain)
  • add vegetable broth
  • add kale/pasta
  • once its brought to a boil, lower heat and simmer for about 1 hr
  • ENJOY!
